Monday Recipes
Notes for Monday:
- Remember that wild rice takes a little longer to cook, so be sure to allow enough time. You should be fine if you start it right after putting the chicken in the oven.
Baked Chicken Parmesan
- 3lb. chicken parts
- 1 cup bread crumbs
- 1/3 cup Parmesan Cheese
- 1/4 tsp. oregano
- 1/4 tsp. pepper
- Salt to taste
- 1 clove garlic or 1 Tbsp. garlic powder
- 3/4 cup melted butter
Combine bread crumbs, cheese, oregano, pepper, and salt; set aside. Lightly saute garlic in 2 T. butter then stir in remaining butter. Dip chicken in garlic butter then roll each piece in bread crumb mixture. Place chicken in 9x13 pan and sprinkle with remaining bread crumb mixture. Pour on remaining butter. Bake at 350° for 55 minutes.

Notes for Tuesday:
- If you plan to serve the applesauce cold, be sure to make it in advance so it has time to chill.
Pork Chops and Applesauce
- 6 pork chops, trimmed of fat
- bread crumbs
- 2 eggs
- oil for browning
Tenderize pork chops with a metal pounder. Beat eggs in a bowl. Put bread crumbs in a container large enough to fit one pork chop in it at a time. Dip each pork chop in the bread crumbs, then the egg, then back into the bread crumbs. Line a 9x13 pan with heavy duty foil and preheat oven to 350°.
Heat oil in a fry pan. Brown the breaded pork chops lightly on each side. Place chops in the foil lined pan and bake covered at 350° for 1 hour, turning halfway through.
Homemade Applesauce:
- 5 Granny Smith apples
- 1/4 cup water
- 1-2 tsp. vanilla
- 1-2 tsp. sugar
Wash, peel, core, and slice apples. Place all ingredients in a sauce pan and simmer, stirring occasionally until apples are tender. You may need to add more water if it cooks down. You may either serve these hot as slices or mash them up and serve them as hot or cold applesauce.

Notes for Wednesday:
- The crockpot lasagna cooks in about 4-5 hours. If you work during the day, that may be inconvenient since you cannot put it on before leaving for work. In that case, you may wish to prepare the lasagna in a 9x13 pan and refrigerate it until you get home or until someone can start baking it in the oven (about 45-55 min. at 350°) in the afternoon.
- Make a large enough salad to save half for Friday night.
Crockpot Lasagna
- 1 28-oz. jar of spaghetti sauce
- 1 package frozen cheese ravioli (about 24-oz.)
- 2 cups shredded mozzarella cheese
Spray crockpot with non-stick cooking spray. Spread 1 cup sauce on the bottom and layer with half of the ravioli. Sprinkle with half of the cheese and another cup of sauce. Layer the remaining ravioli and top with the rest of the sauce. Sprinkle remaining cheese on top. Bake on low for 3-5 hours, depending on how hot your crockpot cooks.
Italian Cut Green Beans
Salad
Combine all fresh ingredients then reserve half for Friday. Add dressing just before serving each night.

Notes for Thursday:
- Make the simple syrup for the lemonade the night before or in the morning so it has time to chill.
Hot Dogs with Chili Sauce
- Hot dogs
- Buns
- Your favorite hot dog chili
- Shredded cheese
- Chopped onions
- Mustard
- Relish
I think hot dogs are always better from the grill. For better buns, wrap several buns in foil and put them on the grill to warm a few minutes before the hot dogs are done. Serve with chili, cheese, chopped onions, mustard, and relish as you prefer.
French Fries
I use frozen fries for ease, but feel free to make homemade fries if you are feeling energetic!
Melon Slices
Take advantage of watermelon, cantaloupe, or honey dew while it is in season.
Fresh Lemonade
- 8 cups water
- 1-3/4 cups sugar
- 1-1/2 cups lemon juice* (or the juice of 6 large lemons)
In a saucepan, combine 2 cups water and the sugar over medium heat. Simmer, stirring frequently, until all of the sugar dissolves. This is called a simple syrup. Remove from heat. Chill for several hours. Before serving, add 6 cups water and the lemon juice and mix well. Serve over ice.
Friday Recipes
Notes for Friday:
- I recommend periodically making a double (or triple) pizza dough recipe in your bread machine or large mixer and freezing the extra dough for an easy lunch or dinner another day. The Urban Homemaker has a double pizza dough recipe that is very good. It has variations for garlic, herbed, or seeded dough.
- If you are using a bread machine to make dough, time it so that it is ready just before you want to cook the pizza. If you are using a frozen pizza dough, be sure to allow enough time for it to thaw. I like to thaw it for several hours in the refrigerator.
Pepperoni Black Olive Pizza
- Your favorite pizza dough recipe (see notes above)
- 28 oz. can spaghetti sauce
- 2 cups mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- sliced black olives
- pepperoni
Make pizza dough according to recipe and roll out on a pizza stone or pan. Layer remaining ingredients. Cook at 400° until brown and bubbly.
Salad
Rootbeer Floats
- Vanilla ice cream
- 2 liter bottle rootbeer, chilled
Pour rootbeer into tall glasses and add a generous scoop of ice cream to each glass. Serve immediately.
