Monday Recipes

Notes for Monday:

  1. Remember that wild rice takes a little longer to cook, so be sure to allow enough time. You should be fine if you start it right after putting the chicken in the oven.
Menus 4 Moms recipe Chicken Stir Fry
  • 14 oz. bag stir-fry frozen vegetables
  • 1 lb. raw boneless chicken
  • 1 bottle Kikkoman Stir-fry sauce
  • olive oil

Slice or chop chicken. Steam frozen vegetables until thawed and drain well. While vegetables are steaming, sauté chicken in oil until done in a wok or large fry pan. Add vegetables and cook until hot. Pour 1/2 - 3/4 bottle of the stir fry sauce over everything and simmer until bubbly. Serve over rice (for children it may be better to serve rice with soy sauce and stir-fry separately).

Tuesday Recipes

Notes for Tuesday:

  1. You can make soft or hard tacos, whichever your family prefers.
Menus 4 Moms recipe Tacos

  • tortillas or taco shells*
  • 1 lb. cooked ground beef (from freezer)
  • 1 pkg. taco seasoning
  • shredded lettuce
  • diced tomatoes
  • grated cheese
  • sour cream
  • salsa

Prepare taco meat according to package directions. For softer tacos that don't break when you bite them, preheat oven to 300°. Fill each taco with meat and grated cheese and place on cookie sheet. Bake for 5 minutes. Serve with lettuce, tomato, cheese, sour cream, and salsa.

Menus 4 Moms recipe Churros
  • Pillsbury refrigerated bread sticks* (or homemade bread stick dough that is ready to be baked)
  • cinnamon & sugar mixture

This easy recipe is a kid pleaser. Twist the bread sticks by holding each end and twisting in opposite directions. Roll gently in cinnamon and sugar mixture and bake as usual.

 

Wednesday Recipes

Notes for Wednesday:

  1. If you do not have cooked onion in the freezer, this would be a good time to pick up a bag of onions and chop the whole thing and saute in olive oil until transparent, then freezer in dated freezer bags. I have added a bag of onions to the shopping list for this purpose.

  2. Save the other half of the green bell pepper for Friday's pizza.
Menus 4 Moms recipe Crockpot Chicken and Vegetables
  • 2 cups fresh baby carrots
  • 4 medium white or red potatoes, cut into quarters
  • 1/2 onion, chopped
  • 6 boneless skinless chicken breast halves
  • 1/2 bell pepper any color, chopped
  • 1 can cream of mushroom soup
  • 1/4 cup water
  • 2 tsp dried oregano
  • 1/2 tsp paprika
  • Adobo seasoning to taste
Place carrots, potatoes, onion, chicken and pepper in crock in order. Mix soup, water, adobo, and oregano and pour over chicken. Top with paprika. Cover and cook on low for 8 hours.
 
 
 
Menus 4 Moms recipe Homemade Applesauce
  • 5 Granny Smith apples
  • 1/4 cup water
  • 1-2 tsp. vanilla
  • 1-2 tsp. sugar

Wash, peel, core, and slice apples. Place all ingredients in a sauce pan and simmer, stirring occasionally until apples are tender. You may need to add more water if it cooks down. You may either serve these hot as slices or mash them up and serve them as hot or cold applesauce.

 

 

Thursday Recipes

Notes for Thursday:

  1. Make a large salad and reserve half for tomorrow night, adding any crunchy ingredients and salad dressing just before serving each night.

  2. You can double the quiche recipe and freeze a batch in a dated freezer bag if you wish.

  • 5 eggs
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 stick melted butter
  • 1 cup cottage cheese
  • 1/2 lb. grated cheddar cheese

Combine all ingredients and pour into a well-greased 9x9 pan. Bake at 400° for 15 minutes. Reduce to 350° and cook for 30-40 more minutes.

Friday Recipes

Notes for Friday:

  1. I recommend periodically making a double (or triple) pizza dough recipe in your bread machine or large mixer and freezing the extra dough for an easy lunch or dinner another day. The Urban Homemaker has a double pizza dough recipe that is very good. It has variations for garlic, herbed, or seeded dough.

  2. If you are using a bread machine to make dough, time it so that it is ready just before you want to cook the pizza. If you are using a frozen pizza dough, be sure to allow enough time for it to thaw. I like to thaw it for several hours in the refrigerator.

 

Menus 4 Moms recipe Vegetarian Pizza
  • Your favorite pizza dough recipe (see notes above)
  • 28 oz. can spaghetti sauce
  • 2 cups mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • Sliced onions, peppers, black olives, mushrooms, and any other veggies you like on pizza

Make pizza dough according to recipe and roll out on a pizza stone or pan. Layer remaining ingredients. Cook at 400° until brown and bubbly.

Menus 4 Moms recipe  Baked Bananas

  • 1 very ripe banana per person
  • Vanilla yogurt or frozen yogurt
  • Fresh berries (any kind)

Make a lengthwise split in the peel of each banana and arrange in a foil lined baking sheet. Bake at 400° for 10 minutes or until peels are black and juices are flowing. Arrange each banana on a plate and pull open peel. Top with vanilla yogurt or frozen yogurt and berries.
