Monday Recipes

Michele's Signature Salmon
- 4 (6 oz) salmon fillets (about 1 inch thick)
- ¼ cup soy sauce
- 2 cloves chopped or minced garlic
- ½ cup sliced almonds
- ½ med. red onion, thinly sliced
- 10-12 cherry tomatoes, cut in half
Place salmon skin side down in shallow roasting pan. Top with Soy sauce, garlic, almonds, onion and tomatoes Cover fish with a foil tent. Bake at 350° for 30 - 40 minutes.
Alternate ingredients: Substitute Red onions for Spanish or Vidalia onions, or top with parsley or Italian seasonings. Substitute tomatoes for any citrus fruit. Oranges, pineapple, lemons or limes (even mango or papaya).
Almond-baked Asparagus
- 2 lbs. asparagus, cleaned with bottoms trimmed
- olive oil
- slivered or sliced almonds
- minced garlic
- kosher salt
Take two bunches of Asparagus, cleaned with the bottoms trimmed. Put them on a cookie sheet sprayed with non-stick cooking spray. Drizzle with olive oil, slivered or sliced almonds, minced garlic and some kosher salt to taste. Cook at 400° for 10-15 minutes.
Wild Rice
Blueberry Muffins

- 1 1/2 cups all-purpose flour
- 3/4 cup white sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup fresh blueberries
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, cubed
- 1 1/2 teaspoons ground cinnamon
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

Tuesday Recipes
Notes for Tuesday:
- Edamame are soy beans salted and boiled in the pod. They are a popular Japanese snack that is sold frozen. If your local grocer, health food store, or oriental food store sells them, definitely give them a try. They are very popular with children since they are a finger food and kids like popping the beans from the pod into their mouths. If you can't find them, serve Snow Peas with dip.
Chicken Teriyaki Burgers with Pineapple Slices
- 4-6 boneless skinless chicken breasts
- 1/2 cup teriyaki sauce
- 4-6 hamburger buns
- 4 -6 pineapple slices
- Lettuce
- Mayo and Mustard
Marinate chicken breasts in teriyaki sauce overnight. (15-30 minutes if you're in a hurry.) On stovetop or grill, cook chicken about 12 to 14 minutes. Place each cooked chicken breast on a bun and top with a pineapple slice. Complete with lettuce and condiments your choice.
Edamame
Boil 1 bag of frozen edamame in salted water until they float. Drain in a colander, rinse with cold water, and sprinkle with coarse salt. Serve at room temperature by holding the pod to your mouth and squeezing until the beans pop into your mouth. Discard the pod.
Mango/Strawberry/Pineapple Salsa
- 1 pint (12 oz) Strawberries, stemmed and chopped
- 1 large Mango, peeled seeded and chopped
- 1 cup pineapple, (crushed and drained or pineapple chunks), optional
- ¼ cup green onions, sliced (can substitute with finely diced red onion)
- 2 Tbsp fresh lime juice ( I used lemon)
- 1 Tbsp fresh chopped cilantro
- ½ tsp red pepper flakes
- ¼ tsp ground cumin
- Salt to taste
In bowl, toss all ingredients and blend thoroughly. Salsa will last for two days (it gets soupy after that).
Wednesday Recipes
Notes for Wednesday:
- I would love to tell you that I have a wonderful homemade chocolate pudding recipe, but I use the boxes of Food Lion brand instant pudding. Choose your favorite brand or recipe and make it according to directions. Be sure to make it early enough that it has time to set up.
Crockpot White Chicken Chili
- 4 chicken breasts, cubed
- 1 cup chopped onion, cooked (from freezer)
- 2 cloves garlic, finely chopped
- 1 1/2 cups chicken broth
- 1 tsp ground cumin
- 1 tsp dried leaf oregano
- 1/2 tsp salt
- 1/4 tsp Tabasco sauce
- 2 cans (about 15 ounces each) great northern beans, drained, rinsed
- 1 can (12 to 15 oz.) corn, drained
- 2 Tbsp. chopped fresh cilantro, optional
Mix onion, garlic, chicken broth, cumin, oregano, salt and Tabasco in 3 1/2 to 6-quart crockpot. Add cubed chicken breasts. Cover and cook on low for 4 1/2 to 5 1/2 hours, or until chicken is tender (this may vary depending on how hot your crockpot cooks). Stir in beans, corn, and cilantro, if using. Cover and cook on low 30 minutes or until thoroughly heated.
Cornbread with Honey Butter
- 1 cup cornmeal
- 1 cup flour
- 1/4 cup sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1/4 cup olive oil
- 1 cup milk
- 1 egg
Preheat oven to 425°F. Put half of the olive oil in a 9x9x2 cast iron skillet and preheat in oven without burning oil. Mix all remaining ingredients in a bowl. Pour batter into preheated cast iron skillet and bake for 20-25 minutes or until done.
Note: if you do not have a cast iron skillet, spray a pan with non-stick spray and mix all of the olive oil into the batter. Do not preheat your pan if it isn't cast iron.
Serve with softened butter that has been mixed with a little honey to taste.

Notes for Thursday:
- If you do not have any meatballs in yor freezer, you can purchase a bag of frozen meatballs at the store.
Spaghetti with Meatballs
- 1 (28 ounce) jar spaghetti sauce
- 1 (14.5 ounce) can peeled and diced tomatoes
- 1 (14.5 ounce) can stewed tomatoes
- 1 (6 ounce) can tomato paste
- 1 onion (from freezer), thawed
- 2-3 cloves minced garlic
- 1 tsp. dried thyme
- 1 bay leaf
- 1 tsp. oregano
- 1 tsp. basil
- meatballs (from freezer, thawed)
Combine all ingredients and simmer in a slow cooker for 4-5 hours on low.
Green Beans
Garlic Bread
- 2 fresh hoagie rolls, sliced loafwise
- 1/2 stick butter
- 3 cloves garlic, crushed
- salt
Melt butter in saucepan. Add garlic and salt to taste. Dip one side of bread slices into garlic butter and place on cookie sheet in loaf form. Warm at 350° until hot.

Friday Recipes
Notes for Friday:
- Many families make Friday night a family movie night, complete with popcorn. If you aren't among them, pick out a movie and try this with your family. It may be the start of a new tradition!
Make Your Own Pizza
- Homemade or store-bought pizza dough
- 28 oz. can of spaghetti sauce
- toppings of your choice
- shredded cheeses
Make or buy your dough for the pizza crust like you usually do, then divide the dough. I suggest making squares that are about 7" - at least one for each person - and putting them together in either a larger square or rectangular shape and prebake for about 7 minutes at the temperature called for in your dough recipe. Let cool. Set out all the toppings before baking the second time and let everyone make what they like. For convenience you might only use spaghetti sauce, but if you family is a fan of white pizzas you may prefer to change that to alfredo sauce. Suggested toppings include mozzarella and Parmesan cheeses, pepperoni, ham, sausage, chicken, black olives, jalapeno peppers, onions, green peppers, mushrooms, pineapple and anything else your family likes. Once completed, bake the pizzas until crust is golden brown and cheese is bubbly.
