Monday Recipes
Notes for Monday: none
Breaded Pork Chops
- 6 pork chops, trimmed of fat
- bread crumbs
- 2 eggs
- oil for browning
Tenderize pork chops with a metal pounder. Beat eggs in a bowl. Put bread crumbs in a container large enough to fit one pork chop in it at a time. Dip each pork chop in the bread crumbs, then the egg, then back into the bread crumbs. Line a 9x13 pan with heavy duty foil and preheat oven to 350°.
Heat oil in a fry pan. Brown the breaded pork chops lightly on each side. Place chops in the foil lined pan and bake covered at 350° for 1 hour, turning halfway through.
Peas and Carrots
Browned Rice
- olive oil
- 1-1/2 cups rice
- 1 can chicken broth
- 1 cup water
- seasonings (like adobo, Italian seasoning, or other spices as preferred), optional
Add 2 T. olive oil to pan and brown the uncooked rice. Do not burn! Add chicken broth and water (this will sizzle loudly when the liquid meets the hot oil), add seasonings to taste, and bring to a boil. Cover and cook on low for 20 minutes; do not open until time is up. (If you use brown rice, increase cooking time to the time recommended on the bag.)
Tuesday Recipes
Notes for Tuesday:
- If preferred, the Kielbasa Skillet Stew can be transfered to the slow cooker after the initial cooking in the skillet.
Kielbasa Skillet Stew
- 5 bacon strips, cooked
- 1 onion, sauteed (from freezer)
- olive oil
- 1 to 1-1/2 lbs. smoked kielbasa (fully cooked), thinly sliced
- 2 - 15.5 oz. cans great northern beans, undrained
- 2 - 8 oz. cans tomato sauce
- 1 can chopped green chiles
- 2 medium carrots, thinly sliced
- 1/2 green pepper, chopped
- 1/2 tsp. Italian seasoning
- 1/2 tsp. dried thyme
- 1/8 tsp. pepper
In a large skillet, cook sausage in a couple of tablespoons of olive oil. Add remaining ingredients except bacon and bring to a boil. Reduce heat, cover and simmer for 45 minutes, stirring occassionally. Crumble bacon. Serve hot with bacon on top.

Wednesday Recipes
Notes for Wednesday:
- I have doubled the ingredients for Sloppy Joes so that you can use half for Friday's Sloppy Joe Pizza.
- I am adding 5 lbs. ground beef to the list. You can use two for the Sloppy Joes and the other 3 to be browned and frozen to replace what you used this week. Remember to rotate your freezer so you use the oldest first.
- I have added a bag of onions and 3 bell peppers. Chop and saute these together and freeze all but what you need for tonight's Sloppy Joes just like you freeze your onions.

Thursday Recipes
Notes for Thursday:
- Those of you with Angel Food boxes can use the breaded chicken patties in the most recent box for this dish.
Easy Chicken Parmesan
- frozen breaded chicken tenders or breasts, or fresh boned chicken breasts that have been breaded and baked
- 1 jar spaghetti sauce
- 2 cups Mozzarella cheese
- 1/2 cup Parmesan cheese
Place chicken on a flat baking pan (I prefer stoneware). Spoon spaghetti sauce on top until each individual piece of chicken is covered. Sprinkle with Mozzarella cheese, then top with Parmesan cheese. Bake at 350° until bubbly.

Friday Recipes
Notes for Friday:
- Prepare the Jello Fruit Salad in the morning.
- Start the pizza crust dough in the bread machine early enough that it will be done by dinner time.
Sloppy Joe Pizza
- 2 cups Sloppy Joe sauce from Wednesday
- 3/4 cup frozen corn, thawed
- 1/2 cup sliced green onions
- 1-1/2 cups colby-jack or Mexican blend* cheese
- 1 recipe bread machine pizza dough, prepared and baked until almost done
In a skillet, combine Sloppy Joe sauce, corn, and green onions. Heat through. Spread mixture on top of baked pizza crust and sprinkle with cheese. Bake at 425° for 12 to 15 minutes or until cheese is melted.
Salad
Jello Fruit Salad
- 1 small package orange gelatin
- 1 cup hot water
- 1 cup mayonnaise
- 1 cup evaporated milk
- 1 cup crushed pineapple, drained
- lettuce leaves
Mix gelatin in hot water until dissolved. Add all other ingredients, pour into a mold or 8x8 pan and chill until set. Serve on a lettuce leaf.
