Notes for Monday:
Baked Chicken Parmesan Combine bread crumbs, cheese, oregano, pepper, and salt; set aside. Lightly saute garlic in 2 T. butter then stir in remaining butter. Dip chicken in garlic butter then roll each piece in bread crumb mixture. Place chicken in 9x13 pan and sprinkle with remaining bread crumb mixture. Pour on remaining butter. Bake at 350° for 55 minutes.
Wild Rice
Steamed Broccoli (fresh* or frozen)
Fresh Seasonal Fruit of Your Choice Notes for Tuesday:
Pork Chops and Applesauce Tenderize pork chops with a metal pounder. Beat eggs in a bowl. Put bread crumbs in a container large enough to fit one pork chop in it at a time. Dip each pork chop in the bread crumbs, then the egg, then back into the bread crumbs. Line a 9x13 pan with heavy duty foil and preheat oven to 350°.
Heat oil in a fry pan. Brown the breaded pork chops lightly on each side. Place chops in the foil lined pan and bake covered at 350° for 1 hour, turning halfway through.
Homemade Applesauce:
Wash, peel, core, and slice apples. Place all ingredients in a sauce pan and simmer, stirring occasionally until apples are tender. You may need to add more water if it cooks down. You may either serve these hot as slices or mash them up and serve them as hot or cold applesauce.
Raw Carrots with Ranch Dressing Dip
Strawberries
Notes for Wednesday:
Crockpot Lasagna Spray crockpot with non-stick cooking spray. Spread 1 cup sauce on the bottom and layer with half of the ravioli. Sprinkle with half of the cheese and another cup of sauce. Layer the remaining ravioli and top with the rest of the sauce. Sprinkle remaining cheese on top. Bake on low for 3-5 hours, depending on how hot your crockpot cooks.
Italian Cut Green Beans
Salad Combine all fresh ingredients then reserve half for Friday. Add dressing just before serving each night.
Fresh Peach Halves
Notes for Thursday:
Hot Dogs with Chili Sauce I think hot dogs are always better from the grill. For better buns, wrap several buns in foil and put them on the grill to warm a few minutes before the hot dogs are done. Serve with chili, cheese, chopped onions, mustard, and relish as you prefer.
French Fries
I use frozen fries for ease, but feel free to make homemade fries if you are feeling energetic!
Melon Slices
Take advantage of watermelon, cantaloupe, or honey dew while it is in season.
Fresh Lemonade In a saucepan, combine 2 cups water and the sugar over medium heat. Simmer, stirring frequently, until all of the sugar dissolves. This is called a simple syrup. Remove from heat. Chill for several hours. Before serving, add 6 cups water and the lemon juice and mix well. Serve over ice.
Notes for Friday:
Pepperoni Black Olive Pizza Make pizza dough according to recipe and roll out on a pizza stone or pan. Layer remaining ingredients. Cook at 400° until brown and bubbly.
Salad
Rootbeer Floats Pour rootbeer into tall glasses and add a generous scoop of ice cream to each glass. Serve immediately.
