Notes for Monday: none
Michele's Signature Salmon Place salmon skin side down in shallow roasting pan. Top with Soy sauce, garlic, almonds, onion and tomatoes Cover fish with a foil tent. Bake at 350° for 30 - 40 minutes.
Alternate ingredients: Substitute Red onions for Spanish or Vidalia onions, or top with parsley or Italian seasonings. Substitute tomatoes for any citrus fruit. Oranges, pineapple, lemons or limes (even mango or papaya).
Almond-baked Asparagus Take two bunches of Asparagus, cleaned with the bottoms trimmed. Put them on a cookie sheet sprayed with non-stick cooking spray. Drizzle with olive oil, slivered or sliced almonds, minced garlic and some kosher salt to taste. Cook at 400° for 10-15 minutes.

Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

Notes for Tuesday:
Chicken Teriyaki Burgers with Pineapple Slices Marinate chicken breasts in teriyaki sauce overnight. (15-30 minutes if you’re in a hurry.) On stovetop or grill, cook chicken about 12 to 14 minutes. Place each cooked chicken breast on a bun and top with a pineapple slice. Complete with lettuce and condiments your choice.
Edamame Boil 1 bag of frozen edamame in salted water until they float. Drain in a colander, rinse with cold water, and sprinkle with coarse salt. Serve at room temperature by holding the pod to your mouth and squeezing until the beans pop into your mouth. Discard the pod.
Mango/Strawberry/Pineapple Salsa In bowl, toss all ingredients and blend thoroughly. Salsa will last for two days (it gets soupy after that).
Notes for Wednesday:
Crockpot White Chicken Chili Mix onion, garlic, chicken broth, cumin, oregano, salt and Tabasco in 3 1/2 to 6-quart crockpot. Add cubed chicken breasts. Cover and cook on low for 4 1/2 to 5 1/2 hours, or until chicken is tender (this may vary depending on how hot your crockpot cooks). Stir in beans, corn, and cilantro, if using. Cover and cook on low 30 minutes or until thoroughly heated.
Cornbread with Honey Butter Preheat oven to 425°F. Put half of the olive oil in a 9x9x2 cast iron skillet and preheat in oven without burning oil. Mix all remaining ingredients in a bowl. Pour batter into preheated cast iron skillet and bake for 20-25 minutes or until done.
Note: if you do not have a cast iron skillet, spray a pan with non-stick spray and mix all of the olive oil into the batter. Do not preheat your pan if it isn't cast iron.
Serve with softened butter that has been mixed with a little honey to taste.
Chocolate Pudding Notes for Thursday:
Spaghetti with Meatballs Combine all ingredients and simmer in a slow cooker for 4-5 hours on low.

Garlic Bread Melt butter in saucepan. Add garlic and salt to taste. Dip one side of bread slices into garlic butter and place on cookie sheet in loaf form. Warm at 350° until hot.

Notes for Friday:
Make Your Own Pizza Make or buy your dough for the pizza crust like you usually do, then divide the dough. I suggest making squares that are about 7" - at least one for each person - and putting them together in either a larger square or rectangular shape and prebake for about 7 minutes at the temperature called for in your dough recipe. Let cool. Set out all the toppings before baking the second time and let everyone make what they like. For convenience you might only use spaghetti sauce, but if you family is a fan of white pizzas you may prefer to change that to alfredo sauce. Suggested toppings include mozzarella and Parmesan cheeses, pepperoni, ham, sausage, chicken, black olives, jalapeno peppers, onions, green peppers, mushrooms, pineapple and anything else your family likes. Once completed, bake the pizzas until crust is golden brown and cheese is bubbly.
