Monday Recipes

Notes for Monday:

  1. Tonight we will be making taco seasoned ground beef. The grocery list shows 5 pounds ground beef and a pack of taco seasoning per pound. Brown your ground beef and follow seasoning packet directions. Set aside one pound in the freezer for 3/15/07 when we will be having another taco dish. Put any extra seasoned meat in the freezer for when you need a quick meal.
  2. This recipe is basically a salad with fixings of your choice. If you want to add the onions and green peppers, this would be a good time to buy in bulk, chop and replenish your freezer. You will want to add extra to your shopping list.
Menus 4 Moms recipe Taco Mac Salad
  • 1 box (8 oz.) tri-color spiral macaroni
  • 1 lb. taco seasoned ground beef
  • 1/2 cup green peppers, chopped
  • 1/2 cup onions, chopped
  • 1 cup cheese - cheddar, shredded
  • 1 carton cherry tomatoes
  • 1/2 head lettuce, shredded
  • salt
  • pepper
  • 1/2 cup french dressing
  • 1 package nacho doritos

Cook macaroni as directed. Drain. Rinse with cold water. Drain again. In a large bowl mix macaroni, green pepper, onion, cheese, tomatoes, lettuce, & seasonings. Chill. Just before serving, stir in warm seasoned ground beef, french dressing and chips. Toss lightly.

Tuesday Recipes

Notes for Tuesday:

  1. Tonight's meal is a slow cooker meal that you can put on in the morning and have ready just in time for dinner. Save a cup of chopped ham for the Hawaiian Pizza on Thursday then chop and freeze any remaining ham, labeling 1 cup for next Monday (3/5/07) when we will be having Linguini with Ham, Peas and Mushrooms.
  2. For the green beans, use your choice of herbs to season them. I like a little bit of butter and Italian seasoning.
Menus 4 Moms recipe  Baked Ham
  • 5 lb. ham, preferably smoked butt or shoulder

    Place ham in slow cooker and cook 8-10 hours on low. Slice tonight's portion before serving. Reserve 1 cup for Thursday. Shred or chop leftovers and freeze in 1-2 cup portions.

Wednesday Recipes

Notes for Wednesday:

  1. I like to use chicken breasts for this dish (you can use bone-in or boneless) but you may prefer thighs or some other part.
  2. This would be a good time to bake or boil extra chicken to freeze for quick meals in the future. If you chose to cook extra, be sure to add to your grocery list.
Menus 4 Moms recipe  Baked Chicken Parmesan
  • 6 boneless chicken breasts
  • 1 cup bread crumbs
  • 1/3 cup Parmesan Cheese
  • 1/4 tsp. oregano
  • 1/4 tsp. pepper
  • Salt to taste
  • 1 clove garlic or 1 Tbsp. garlic powder
  • 3/4 cup melted butter

Combine bread crumbs, cheese, oregano, pepper, and salt; set aside. Lightly saute garlic in 2 T. butter then stir in remaining butter. Dip chicken in garlic butter then roll each piece in bread crumb mixture. Place chicken in 9x13 pan and sprinkle with remaining bread crumb mixture. Pour on remaining butter. Bake at 350° for 55 minutes.

Menus 4 Moms recipe Baked Potatoes

Baked potatoes can be easily prepared by cleaning them in the morning and cooking in the slow cooker for 3-4 hours on high or 6-7 hours on low. If the timing doesn't work for you, just cook them in the microwave before dinner. I prick them with a fork and start with 6 minutes, checking them regularly to see if they are done.

Thursday Recipes

Notes for Thursday:

  1. Make a large salad tonight and save half for tomorrow night. Add croutons, bacon bits, sunflower seeds, and any other "crunchies" just before serving each night.
  2. Use your bread maker (especially if you have one with a timer) to get your pizza dough ready just in time to put together the pizza for dinner. Use the recipe that came with your bread maker or this great recipe. It is large enough to make several portions that you can freeze (freeze dough before cooking).
  3. The best pizza is made on stoneware, and nobody makes stoneware like Pampered Chef. I don't get paid for saying this, I just love their stoneware. I have 2 stoneware pizza pans (1 is PC and 1 is not, and there is no comparison between them) and I use them all the time. I don't own a metal cookie sheet or pizza pan anymore.
  4. If you didn't have any leftover ham from Tuesday, be sure to add ham to your grocery list.

 

Menus 4 Moms recipe Hawaiian Pizza
  • Homemade pizza dough
  • 28 oz. can spaghetti sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup leftover shredded ham
  • 1-20 oz. can pineapple chunks, drained

Roll out your prepared dough on a pizza pan. Spread with spaghetti sauce and top with cheeses. Add your toppings and bake at 450° until hot and bubbly.

Friday Recipes

Notes for Friday:

  1. You may adjust the amount of cheese in this soup. If your family prefers it less cheesy, use 8 or 12 oz. of Velveeta. You may also add cooked chicken if you would like.
  2. Using the leftover salad from last night, add croutons, bacon bits, sunflower seeds, and any other "crunchies" just before serving.
Menus 4 Moms recipe  Cheesy Broccoli Soup
  • 2 Tbsp. butter
  • 1/4 cup chopped onion (from freezer)
  • 2 Tbsp. flour
  • 2 1/2 cups milk
  • 1 lb. Velveeta prepared cheese product, chopped into 1-1/2" cubes for easier melting
  • 1 pkg. (10-16* oz., depending on how much broccoli you want in the soup) frozen broccoli, thawed and drained
  • 1/8 tsp. pepper
  • 1 tsp. marjoram
  • 1/4 tsp. Adobo

Melt oil over medium heat in a large saucepan (6 qt. is good) on stovetop. Add onion and saute until tender. Add flour, stirring constantly for 1 minute over medium heat.

Add milk, stirring constantly. Bring to a gentle boil and reduce heat to medium-low. Simmer 1 minute. Add all remaining ingredients and cook until cheese is melted and soup is heated through.

Combine your favorite fruits, chopped into bite size pieces. The grocery list contains apples, bananas, and strawberries.
