Dinner Recipes


Notes:

  1. This menu should serve 8-10 adults plus smaller children comfortably. If you have growing teens, big appetites, or more people, I suggest doubling several of the side dishes and cooking a larger ham.

  2. Some of these dishes can be made ahead and refrigerated until time to bake. They are marked with **.

  3. The Ham recipe calls for a fully cooked ham. If you purchase an uncooked ham, make sure you cook the ham a day or two in advance.

 
 

Appetizers

 

Menus 4 Moms recipe 7-Layer Dip
  • 1 pkg. taco seasoning
  • 1-8 oz. container sour cream
  • 1-16 oz. can bean dip or refried beans*
  • 2 avocados, mashed with lemon juice
  • 1 cup Monterey jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 3 tomatoes, chopped fine
  • 1/2 cup green onion, sliced
  • 1-15 oz. can black olives, chopped
  • tortilla chips

Mix taco seasoning into the sour cream (you may want to use less than one package depending on taste). Layer in a 5x9 oblong casserole dish or in a glass bowl in the following order: bean dip, avocados, sour cream mixture, jack cheese, cheddar cheese, tomatoes, green onions,and black olives. Serve with tortilla chips.


Christmas Dinner

Menus 4 Moms recipe Marmalade Ham **
Marmalade Ham
  • 1 (3-4 lb.) ham, boneless and fully cooked
  • 15 whole cloves
  • 1 can beef broth
  • 1/3 cup brown sugar, packed
  • 1/2 cup orange marmalade

Prepare the ham by scoring in a crisscross pattern about 1/4 to 1/2 inch deep. Insert a clove into each diamond shape made by the crisscross pattern. Pour broth over the ham and rub brown sugar over the top of the ham. Cover and bake at 325°F for about 1 hour and 15 minutes or until ham is heated through (a meat thermometer should read 140°F). Slice and serve.

** This can be prepared ahead of time and reheated 1-2 hours before mealtime.

Menus 4 Moms recipe Cashew Green Beans
  • 2 lbs green beans, fresh and snapped
  • 1/4 cup butter or margarine
  • 1 tbsp parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup whole cashews

Place green beans in a large pan and cover with water. Bring to a boil; reduce heat and simmer for 10 minutes, uncovered. Drain beans, return to pan and add remaining ingredients except for cashews. Cook over medium heat until heated through. Sprinkle with cashews and serve.


 

Menus 4 Moms recipe Cheesy Potatoes **
  • 1/2 cup butter
  • 2 lbs red potatoes, unpeeled, quartered and boiled
  • 2 tsp garlic, minced
  • 1/4 cup Parmesan cheese, divided
  • 1/2 cup milk
  • 1 1/2 cup Monterey Jack cheese, shredded
  • 1 1/2 cup cheddar cheese, shredded
  • 1 tbsp green onions, chopped
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1 tsp paprika

Pour butter over cooked potatoes and add garlic, 1/2 of the Parmesan cheese, and the remaining ingredients. Mix well and spread in a lightly greased 9x13 inch baking dish. Sprinkle with remaining cheese and bake at 350° for 30-40 minutes.

**The potatoes can be boiled ahead of time for quick Christmas day dinner prep.

 
 
 
 
 
Menus 4 Moms recipe Creamed Corn
  • 2-12 oz. bag frozen white shoepeg corn
  • 1/2 cup butter
  • 1/2 cup water
  • 2 tsp. sugar
  • 1 cup milk
  • 4 tsp. cornstarch
  • 1 tsp. salt
  • 1 tsp. pepper

Thaw corn. Melt butter and in a blender, combine corn, butter, water, and sugar. Blend until creamy with bits of corn left in the mix. In a frypan over medium heat, mix milk, cornstarch, salt, and pepper, stirring constantly with a whisk to get rid of any lumps. Add corn mixture and heat, stirring occasionally, until thick and bubbly.


 
Dinner Rolls (homemade or store bought*)
 
 
 
 
 

Beverages

Menus 4 Moms recipe Wassail**
  • 1 qt. boiling water
  • 4 tea bags
  • 1 gallon apple cider
  • 2 qts orange juice
  • 1 qt cranberry juice
  • 2 tbsp lemon juice
  • 1 1/2 cups sugar
  • 5 cinnamon sticks
  • 10 whole cloves
  • 1 orange

Insert cloves into orange. Set aside. Steep tea bags in boiling water for 5 minutes. Remove tea bags and stir in apple cider, juices and sugar. Bring to a boil then reduce heat; add orange and cinnamon sticks to the tea mixture.and and simmer for 30 minutes. Remove orange and cinnamon sticks and serve warm. I keep my wassail warm either on the stovetop or in a crockpot with a ladle.

Menus 4 Moms recipe Famous Chocolate Refrigerator Roll**
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • 1 (9 oz.) package NABISCO Famous Chocolate Wafers

Pour heavy cream and vanilla into a medium bowl. Beat with a mixer about 3-5 minutes or until thickened. Set aside 2-3 wafers and crumble for topping. Spread 1/2 tbsp whipped cream on each wafer. Begin stacking wafers together and stand on edge on long serving platter to make a 14 inch "log". Frost the "log" that you have made with the remaining whipped cream. Cover with plastic wrap and chill for 4-6 hours or freeze until firm. To serve, garnish with crumbled wafers sprinkled across the top of the "log". Slice the roll at a 45° angle to achieve a "striped" appearance.

 
Menus 4 Moms recipe  Lemon Squares**
  • 2 cups flour
  • 1 cup butter or margarine
  • 1 cup powdered sugar
  • 4 eggs
  • 2 cups sugar
  • 1 tsp baking powder
  • 5 tbsp fresh lemon juice
  • dash of salt

Sift the flour and 1/2 cup of the powdered sugar together in a bowl. Blend in the butter until well mixed. Pat evenly into the bottom of an 9x13 baking pan and bake at 350°F for 20 minutes. In the meantime, beat together eggs, granulated sugar, baking powder, lemon juice and salt. When crust is done baking, pour mixture over the baked crust and return it to the oven for 25-30 minutes. Cool completely on a wire rack. Cut into squares. Sprinkle with remaining powdered sugar. Serve.
