Notes:
- You may serve these appetizers on New Year's Eve or New Year's Day for football if you prefer. Since many people like to serve the traditional black-eyed peas on New Year's Day, you may want to serve Texas Caviar on the 1st.
- Make the Texas Caviar and Cheese Ball a day ahead so they can chill.
Texas Caviar
Although called caviar, this is a veggie and bean relish that has nothing at all to do with fish. It is delicious, and in Virginia we have a similar dish we call Virginia Caviar. This one has a Tex-Mexican flare.
- 2 cans (16 oz) ranch style black eyed peas
- 1 can (16 oz) Bush’s White Hominy (drained)
- 1 jar (16 oz) Pace Picante sauce (med. flavor)
- 1 cup chopped white onions
- 1 cup chopped tomatoes
- 3/4 cup chopped green pepper
- 1/4 cup seeded finely chopped jalapeno
- 1/4 cup minced fresh garlic
- 1 tbsp. ground black pepper
- 1 tbsp. sugar
- 1/2 cup minced cilantro
- 1 tbsp. salt, dried garlic and ground cumin.
Chill overnight and let flavors mingle. Serve with Fritos. Yummy!

Soft Cheese Ball
- 3/4 stick butter, softened
- 8 oz. cream cheese, softened
- 4 dashes garlic powder
- 2 Tbsp. maple syrup
- 1/2 cup chopped pecans
Mix all ingredients except pecans until well blended. Put on plastic wrap in either a log or a ball shape. Cover with chopped pecans, then wrap with plastic wrap and chill. Serve with Ritz crackers.
Meat and Cheese Tray with Sandwich Rolls
- Ham
- Turkey
- Roast beef
- Salami or Pepperoni
- Provolone Cheese
- Cheddar Cheese
- Pepper Jack Cheese
- Lettuce
- Tomatoes, sliced
- Red Onion, sliced
- Sandwich Rolls
- Sandwich Peppers
- Mustard
- Mayonnaise
Arrange meats and cheese on a platter with lettuce around the edges and tomato and onion slices in the center. Rolling the meat slices makes a nice presentation. Serve buffet style with condiments and rolls.
Slow Cooker Buffalo Chicken Dip
- 1 can of white chicken meat (substitute crab for even better flavor)
- 12 oz bottle of Franks Hot Sauce (or whatever type you prefer)
- 2 -8 oz packages of cream cheese
- 16 oz bottle of Ranch dressing
- 16 oz Monterey Jack cheese or Cheddar Cheese, grated
Combine all ingredients in a slow cooker and cook until bubbly. Serve with celery sticks, crackers, scoop chips, and/or bagel bits.

Sliced Veggies and Dip
- Broccoli
- Celery
- Carrot sticks
- Red or green pepper sticks
- Your choice of dip
Serve with dip of your choice.
Hot Spinach and Artichoke Dip
- 2 cups of mayo
- 1 (14oz) jar of artichoke hearts (NOT marinated, just plain), drained and chopped
- 10 oz frozen chopped spinach, thawed and drained
- 1 1/2 cup grated parmesan cheese
- 1 cup shredded cheddar cheese
- 2 cloves minced garlic
Mix all together and bake in a pie plate for 20-25 minutes. Serve
with rye bread and wheat crackers.
