Monday Recipes
Notes for Monday:
- I like to use chicken breasts for this dish (you can use bone-in or boneless) but you may prefer thighs or some other part.
- If your freezer supply of chicken is getting low, you can bake extra chicken, seasoned with your choice of spices (We like Montreal seasoning; Mary Ann likes Adobo). Add extra chicken to your shopping list if you decide to do this. Let the extra chicken cool while you eat tonight's meal and after dinner, cube the extras and freeze in 2 cup portions. Be sure to label and date your freezer bags.
Baked Chicken Parmesan
- 3 lb. chicken parts
- 1 cup bread crumbs
- 1/3 cup Parmesan cheese
- 1/4 tsp. oregano
- 1/4 tsp. pepper
- Salt to taste
- 1 clove garlic or 1 Tbsp. garlic powder
- 3/4 cup melted butter
Combine bread crumbs, cheese, oregano, pepper, and salt; set aside. Lightly saute garlic in 2 T. butter then stir in remaining butter. Dip chicken in garlic butter then roll each piece in bread crumb mixture. Place chicken in 9x13 pan and sprinkle with remaining bread crumb mixture. Pour on remaining butter. Bake at 350°F for 55 minutes.
Creamed Peas
- 2 tablespoons butter
- 2 tablespoon flour
- 1 cup milk
- 1 teaspoon sugar
- 1/2 teaspoon salt
- Dash pepper
- 2 cups frozen peas (use a 10 oz box, or measure 2-cups from a bag of loose frozen peas)
Garlic Cheese Toast
- 8 slices French bread
- olive oil spray
- 1/2 cup Italian blend cheese, shredded
- 1 tbsp garlic salt or Adobo, to taste
Slice bread and lay flat on a cookie sheet. Spray each slice with olive oil spray. Sprinkle with garlic salt or Adobo. Sprinkle with shredded cheese blend. Bake at 350°F until cheese is melted and starting to brown.

Tuesday Recipes
Notes for Tuesday:
- If you have a wheat mill, try substituting brown rice flour for wheat flour in this recipe. Freshly ground brown rice makes incredibly fluffy waffles!
- If you haven't ever tried grits, do try them. The easiest kind to make are Quick Grits. Do not get instant grits - it is like comparing instant coffee to Starbucks!
Waffles
- 2 large eggs
- 1 3/4 cup buttermilk
- 1 stick butter, melted
- 2 tsp. vanilla
- 2 cups flour
- 2 Tbsp sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 cup pecan meal (optional but delicious)
Mix dry ingredients well. In a separate container mix wet ingredients. Combine and mix until just smooth. Spray waffle iron with non-stick cooking spray and cook according to the instructions for your waffle iron.
Grits
Prepare grits according to package directions, but soak the grits in the cooking water for 30 minutes to an hour before cooking. Serve with lots of butter, salt, and pepper.

Wednesday Recipes
Notes for Wednesday:
- This recipe will freeze well so you may want to double the ingredients on your grocery list and freeze half. (Don't freeze with the egg noodles.)
- Don't forget to prepare your Jello salad early in the day so it will be set in time for dinner.
Crockpot Beef Casserole
- 2 lbs. stew beef cut into 1 inch pieces
- 1 envelope onion soup mix
- 1 (10 1/2 oz.) can cream golden mushroom soup (substitutions)
- 1 (4 oz.) can whole mushrooms
- 1/2 cup red wine
Combine all ingredients in crock pot. Stir together well. Cover (don't peek!) and cook on low for 8-10 hours (or on high for 5-6 hours). Serve over egg noodles.
Egg Noodles
Buttered Lima Beans
- 1 (16 oz.) package frozen lima beans
- 1 tbsp butter
Cook Lima Beans according to package directions. Drain. Add butter to taste.
Jello Fruit Salad
- 1 small package orange gelatin
- 1 cup hot water
- 1 cup mayonnaise
- 1 cup evaporated milk
- 1 cup crushed pineapple, drained
- lettuce leaves
Mix gelatin in hot water until dissolved. Add all other ingredients, pour into a mold or 8x8 pan and chill until set. Serve on a lettuce leaf.
Thursday Recipes
Notes for Thursday:
- If you still have browned ground beef in the freezer, use a pound of that and mark the ground beef off of your grocery list. If you want to brown beef for tonight and the freezer, I have put 5 lbs. of beef on the list to cook and freeze.
Cheeseburger Soup
- 1 lb. ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 3 T. butter or oil
- 3 cup chicken broth
- 4 cup diced potatoes
- 1/4 cup flour
- 8 oz. Velveeta cheese
- 1 1/2 cup milk
- 1 t. basil
- 1/4 cup sour cream
- salt and pepper
In a stock pot, brown beef, drain, rinse with hot water, and set aside. Saute onion, carrots, celery and basil in same pan about 5 minutes. Stir in flour and add broth, potatoes and beef. Cover, reduce heat and simmer until potatoes are tender, about 15 minutes. Add cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream. Serve.

Friday Recipes
Notes for Friday:
- For those of you observing Lent, I have made tonight's meal and all Friday's until Easter vegetarian. If any of you would prefer meat dishes, you can easily add your choice of meats to your pizza. Be sure to add any additional ingredients to your grocery list.
- I recommend periodically making a double (or triple) pizza dough recipe in your bread machine or large mixer and freezing the extra dough for an easy lunch or dinner another day. The Urban Homemaker has a double pizza dough recipe that is very good. It has variations for garlic, herbed, or seeded dough.
- If you are using a bread machine to make dough, time it so that it is ready just before you want to cook the pizza. If you are using a frozen pizza dough, be sure to allow enough time for it to thaw. I like to thaw it for several hours in the refrigerator.
Vegetarian Pizza
- Your favorite pizza dough recipe (see notes above)
- 28 oz. can spaghetti sauce
- 2 cups mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- Sliced onions, peppers, black olives, mushrooms, and any other veggies you like on pizza
Make pizza dough according to recipe and roll out on a pizza stone or pan. Layer remaining ingredients. Cook at 400°F until brown and bubbly.
Salad
Baked Bananas
- 1 very ripe banana per person
- Vanilla yogurt or frozen yogurt
- Fresh berries (any kind)
Make a lengthwise split in the peel of each banana and arrange in a foil lined baking sheet. Bake at 400°F for 10 minutes or until peels are black and juices are flowing. Arrange each banana on a plate and pull open peel. Top with vanilla yogurt or frozen yogurt and berries.
