Don’t Just Stick to Grocery Store
Don't just stick to the grocery store for food items! I've found on occasion that stores like Target sometimes beat the supermarket when it comes to prices of items that are both on and not on sale.

Monday Recipes

Notes for Monday:

  1. Use diced leftover ham from Easter Sunday. If you did not cook the ham on Sunday or if you did not have any leftovers, be sure to add more ham to your grocery list.

  2. Prepare the Jello Parfait in the morning.


Menus 4 Moms recipe Shortcut Chicken Cordon Blue
  • 1 tbsp butter
  • 2 cups diced cooked chicken (from freezer)
  • 1 can cream of mushroom soup
  • 2 tbsp water
  • 2 tbsp dry white wine
  • 1/2 cup swiss cheese, shredded
  • 1/2 cup cooked ham, diced (leftover from Easter ham)
  • 4 cups cooked egg noodles

In a medium skillet over medium heat add soup, water, wine, cheese and ham. Heat to a boil, stirring often. Add cooked chicken to pan. Reduce heat to low, cover and cook 5 minutes or until chicken is heated through, stirring occasionally. Serve over cooked egg noodles.

 

Sauteed Greens of Your Choice


Menus 4 Moms recipe Orange Jell-O Parfait

  • 1 sm. Jell-O (orange)
  • 1 c. sour cream
  • 1 (8 oz.) container Cool Whip
  • 1 tsp. vanilla
  • 1 can mandarin oranges, drained well

Mix the Jell-O packet with the sour cream. Add vanilla and mix well. Fold in Cool Whip. Layer fruit and Jell-O mixture in parfait glasses. Chill. Serve cold.


 

 

Tuesday Recipes

Notes for Tuesday:

  1. This recipe is basically a salad with fixings of your choice. If you want to add the onions and green peppers, this would be a good time to buy in bulk, chop and replenish your freezer. You will want to add extra to your shopping list.

  2. Use cooked ground beef from your freezer for tonight's meal. Thaw the ground beef and follow directions on taco seasoning packet. You will still save time because your meat is already cooked.




Menus 4 Moms recipe Taco Mac Salad
  • 1 box (8 oz.) tri-color spiral macaroni
  • 1 lb. taco seasoned ground beef
  • 1/2 cup green peppers, chopped
  • 1/2 cup onions, chopped
  • 1 cup cheese - cheddar, shredded
  • 1 carton cherry tomatoes
  • 1/2 head lettuce, shredded
  • salt
  • pepper
  • 1/2 cup french dressing
  • 1 package nacho doritos

Cook macaroni as directed. Drain. Rinse with cold water. Drain again. In a large bowl mix macaroni, green pepper, onion, cheese, tomatoes, lettuce, & seasonings. Chill. Just before serving, stir in warm seasoned ground beef, french dressing and chips. Toss lightly.

Wednesday Recipes

Notes for Wednesday:

  1. This isn't one of the healthiest meals, but it is easy to make and easy to adapt to what you have on hand. Feel free to substitute cooked chicken and cream of chicken soup if that is what you have.

  2. Make the Five Cup Salad early so it has time to chill.



Menus 4 Moms recipe Tater Tot Casserole
  • 32. oz package frozen Tater Tots
  • 1/2 lb. browned ground beef, thawed (from freezer)
  • 16 oz. container sour cream
  • 1 cup shredded cheddar cheese
  • 1 can cream of mushroom soup (substitutions)
  • 1 can cream of celery soup (substitutions)
  • 4 oz. can mushrooms, drained
  • 1 pkg. sauteed onions, thawed (from freezer)
  • 6 oz. can French fried onions

Preheat oven to 350°F. Grease a 9x13 casserole pan. Place frozen tater tots in bottom of pan. Sprinkle beef over tater tots. In a bowl, mix sour cream,cheese, soups, mushrooms, and sauteed onions. Pour over beef. Top with French fried onions. Bake for 50-60 minutes or until bubbly.


 
Menus 4 Moms recipe Seasoned Green Beans

  • 1 lb. fresh green beans, slightly steamed
  • 2 T. butter
  • 1/2 package Good Seasonings Italian dressing mix

Melt butter in large fry pan. Add green beans. Sprinkle with the 1/2 package of seasoning mix and stir well while sauteing.

 
 


 
Menus 4 Moms recipe Five Cup Salad
  • 1 cup pineapple chucks, drained
  • 1 cup mandarin oranges, drained
  • 1 cup frozen whipped topping, thawed
  • 1 cup mini marshmallows
  • 1 cup coconut flakes

Mix together all ingredients. Cover and refrigerate until chilled.

 

 

Thursday Recipes

Notes for Thursday:

  1. Tonight, for ease, I have added canned tomato soup to the grocery list. If you have a favorite tomato soup recipe feel free to use your own.

  2. If your family prefers all meals to include meat, add some sliced deli ham to your grilled cheese for ham and cheese sandwiches.

  3. Make enough salad for tonight and tomorrow, adding any crunchy ingredients just before serving each night to avoid a soggy salad.

 

Menus 4 Moms recipe Grilled Cheese Sandwiches

  • bread
  • American cheese slices
  • butter

Put 1-2 slices of cheese between two bread slices and butter the outside on both sides. Grill on a flat griddle until both sides are golden brown and crispy.

Friday Recipes

Notes for Friday:

  1. This would be a great recipe for Kids in the Kitchen. Let your kids thread the skewers with the kabob ingredients, with your help of course, so they don't stab themselves with the skewers.

  2. Use leftover cubed ham from Easter dinner for tonight's kabobs. If you do not have leftover ham, make sure to add ham to your grocery list.


Menus 4 Moms recipe Ham and Pineapple Kabobs
  • 1 can pineapple chunks, unsweetened
  • 6 tbsp butter or margarine
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 2 medium sweet potatoes, peeled & sliced
  • 1 medium green pepper, chunked
  • 1 1/2 - 2 cups ham, cooked & cubed

Drain pineapple, reserving 2 tbsp juice. In a saucepan, combine reserved juice, butter, brown sugar & cinnamon; cook & stir over medium heat until dissolved. Set aside. Place sweet potatoes in another saucepan; cover with water; bring to a boil. Reduce heat. Simmer, uncovered, for 10-12 minutes or until potatoes are tender; drain.

On skewers, alternately thread sweet potatoes, green pepper, ham & pineapple. Brush with brown sugar mixture. Grill or broil 4 in. from heat for 4-6 minutes on each side or until heated through & peppers are tender; basting occasionally. Serve over rice.
