Monday Recipes

Notes for Monday:

  1. Prepare your potato salad early in the morning so it will be ready for your dinner.


Menus 4 Moms recipe Hamburgers

I usually use 1 lb. of ground beef, an egg, and Adobo seasoning (easily found in the spice section of most grocery stores; substitute garlic salt if you can't find it) to make patties. You may add some bread crumbs if you wish. Shape patties for tonight's dinner and grill hamburgers serve on buns with your favorite condiments.

Menus 4 Moms recipe Potato Salad
  • 3 lbs. new potatoes, cooked and cooled (from last night)
  • 1/3 cup red onion, finely chopped (chop and freeze any extra for another use)
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/4 cup stone-ground mustard
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 lb. bacon, cooked and crumbled (or bacon bits*)
  • 2 Tbsp. dried parsley

Cut cooked potatoes into bite-size cubes and put into a large bowl with onion. Combine remaining ingredients and pour over potatoes and onion, mixing well. Refrigerate until ready to serve. Garnish with fresh parsley, if desired.


Menus 4 Moms recipe Baked Beans
  • 2 cans pork and beans
  • 1/2 cup barbecue sauce or more to taste
  • 1 tsp. prepared mustard, or more to taste

Combine all ingredients in a saucepan and simmer for 20 minutes.

 

Menus 4 Moms recipe Smoothies

  • 1/2 quart vanilla yogurt
  • 1 cup frozen strawberries
  • 1 banana
  • 1 cup orange juice

Combine all ingredients in a blender and serve cold. If you prefer a more slushy effect, add crushed ice (if your blender can handle it). If your blender doesn't have a strong motor, thaw the strawberries before blending.

 

Tuesday Recipes

Notes for Tuesday:

  1. Tonight we are using the leftover meat and vegetables from last week's beef kabobs to make fajitas. Reheat the beef and vegetables in a little olive oil on the stovetop or in the microwave. If you did not make extra meat last week, you will need to add beef, bell peppers and onions to your shopping list. You may want to look at last Friday's menu for the marinade instructions.



Menus 4 Moms recipe Fajitas

  • leftover meat and vegetables
  • whole wheat tortillas (store bought or homemade*)
  • sour cream
  • shredded lettuce
  • cheddar cheese
  • salsa
  • guacamole (optional)

Serve heated meat and vegetables with tortillas, guacamole, sour cream, and salsa. Each person assembles their own fajitas by putting meat/vegetable mixture and topping with their choice of condiments, rolling up the tortilla and eating by hand. Be careful not to overload the tortilla.

Homemade Tortillas

  • 4 cups flour
  • 2 tsp. salt
  • 1 stick butter, softened
  • 1 1/2 cups water

Mix all ingredients. Form into golf ball size balls. Roll out flat into a circle. Cook on each side in a dry non-stick pan until starting to brown. DO NOT OVERCOOK. The tortillas cook quickly and it is easy to burn them if you turn away.

 

Corn

 

 

Menus 4 Moms recipe Spanish Rice

  • 1 chopped onion, sauteed (from freezer)
  • black pepper
  • chili powder
  • cumin
  • Adobo seasoning
  • 1 1/2 cups uncooked rice
  • Olive oil
  • 1 can (15 oz.) chicken broth
  • 1 cup water

Saute onion in olive oil in a Dutch oven until tender; remove from pan. Add 2 T. olive oil to pan and brown the uncooked rice. Do not burn! Add chicken broth and water (this will sizzle loudly when the liquid meets the hot oil), add seasonings to taste, and bring to a boil. Cover and cook on low for 20 minutes; do not open. When cooked, add onions and any other warmed items you may have on hand that would be good in rice (corn, salsa, Rotel, etc.). Stir gently and serve.


 

Wednesday Recipes

Notes for Wednesday:

  1. You can use either 2 cans of crescent rolls, a can of pizza dough, or a recipe of pizza dough for the calzones. If you have a large family, double the pizza dough recipe to make 12 calzones.

  2. A few weeks ago, we made a large batch of meatballs. Use those from your freezer tonight. If you are out of those or if you didn't make them, there is a recipe for homemade meatballs under the Freezer Meat notes. I have found that the Kirkland Signature Italian-style Meatballs from Costco are better than what I can make at home and just as inexpensive without the mess. Use whichever is best for you. Don't forget to add meatballs or meat to your grocery list if you need to.

  3. The lemonade is good for kids to make while you are preparing dinner, and it tastes delicious. They will be very proud of the results.


Menus 4 Moms recipe Meatball Calzones
  • Dough of your choice (see notes)
  • Cooked meatballs, 3 per calzone (see notes)
  • 28 oz. jar of spaghetti sauce
  • 2 cups mozzarella cheese

Roll out dough and cut into 6 rectangles, about 5"x7". Place 1 heaping Tbsp. spaghetti sauce on each rectangle. Top with 1 heaping Tbsp. cheese and 3 meatballs. Carefully fold rectangle so that the long side is folded in half and the short sides are touching each other. Seal all around and bake according to the dough instructions. When done, place on plates and top with more sauce and cheese and serve.

 

Salad

 

 

Menus 4 Moms recipe Homemade Strawberry Lemonade
  • 2 cups sugar
  • Juice from 6 medium lemons, or 2/3 cup lemon juice*
  • 4 cups water
  • 1 bag frozen strawberries, thawed
  • 2 cups ice cubes

Mix sugar and water over heat until it boils. Reduce heat. Stir constantly while mixture boils for 3 minutes. Remove from heat and cool. Puree strawberries and ice in a heavy duty blender. Add lemon juice and cooled water/sugar mixture, stirring until thoroughly mixed. Serve immediately.



 

 

Thursday Recipes

Notes for Thursday:

  1. Pork is one of our features for planned leftovers this week. Buy a tenderloin large enough to feed your family for 2 meals at least, preferably more. We will be cubing the leftovers for Pork Lo Mein next week and any more leftovers that you have after the Lo Mein on next week can be frozen for future use.

 

Menus 4 Moms recipe Roast Pork Loin

  • 1 tsp minced garlic
  • 2 tsp marjoram
  • 1 tsp salt
  • 1 tsp dried sage
  • 1 (about 3-4 lbs.) boneless pork loin roast

Preheat oven to 350°F. Mix together all seasonings; rub over pork. Place in a shallow roasting pan, preferably sitting up on a roasting rack. (If you do not have a roasting rack that fits in your pan, try rolling up pieces of aluminum foil and laying the rolls across the pan like a rack.) Bake, uncovered, for about 1 hour and 20 minutes or until a meat thermometer reads 160° F. Let stand for about 10 minutes before slicing.




Menus 4 Moms recipe Creamed Peas
  • 2 tablespoons butter
  • 2 tablespoon flour
  • 1 cup milk
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Dash pepper
  • 2 cups frozen peas (use a 10 oz box, or measure 2-cups from a bag of loose frozen peas)
Melt the butter in a saucepan. Add flour and stir with a whisk for 1 minute. Do not brown the flour and butter mixture. Continue stirring constantly and add the milk gradually. Add salt, pepper, and sugar. Heat to a simmer and continue cooking, stirring constantly, for one minute. Add peas and heat to a simmer. Reduce heat and cover. Simmer for 3-5 minutes, or until peas are tender-crisp. Do not overcook.

Friday Recipes

Notes for Friday:

  1. There are no exact measurements in tonight's chicken dish, so use amounts based on what your family likes. If you do not care for feta cheese, substitute Swiss or cheddar.

  2. Couscous, a staple grain in many North African countries, is a coarsely ground semolina pasta. You can find boxed couscous, both flavored and unflavored, near the rice in your grocery store. If you haven't had couscous before, give it a try. Just follow the directions on the box. My kids love it but be warned...my toddler makes a total MESS eating couscous!


Menus 4 Moms recipe Chicken Stuffed with Bacon and Feta
  • 6 boneless chicken breasts
  • 4 oz. feta cheese, crumbled (basil flavored is good in this recipe)
  • 1 package bacon, cooked and crumbled, or real bacon bits*
  • 14.5 oz can of tomatoes (I like using Del Monte diced tomatoes with basil, oregano and garlic)
  • olive oil

Cut a slit (as if to butterfly but do not cut all the way through the ends so it makes a pocket) in each chicken breast. Stuff with crumbled feta cheese and crumbled bacon (the more the better, I think). Use a toothpick to secure the pocket closed. Brown stuffed chicken in olive oil in a fry pan until golden brown, then add a 14.5 oz. can of diced tomatoes and cover, cooking until chicken is thoroughly done. Before serving, remove toothpicks.

Menus 4 Moms recipe Lima Beans

Simmer in water until tender. Serve with butter, salt and pepper.
