Monday Recipes
Notes for Monday:
- Tonight's salad uses leftover flank steak from last Friday. If you do not have any, try using a package of deli-style roast beef (I like the flavor of the Oscar Mayer). Marinade the meat early in the day.
- Make enough Five Cup Salad to have leftovers tomorrow. The recipe is not doubled but for my family of five I would double the recipe. If you have hungry teens, you may even want to triple the recipe. Adjust your grocery list accordingly.
- Plan ahead for Thursday's Thanksgiving feast. Make sure turkey is thawed, etc.
Steak Salad with Blue Cheese Dressing
- Mixed salad greens
- Sliced bell peppers
- Cherry tomatoes
- Blue Cheese dressing
- Leftover flank steak, sliced
- 1/2 cup Italian dressing
- 1/2 cup steak sauce
Mix flank steak or roast beef with Italian dressing and steak sauce in a small bowl. Cover and refrigerate for 3-4 hours. Layer salad greens, bell peppers, and meat on plates; garnish with cherry tomatoes. Serve with Blue Cheese dressing.
Five Cup Salad
- 1 cup pineapple chucks, drained
- 1 cup mandarin oranges, drained
- 1 cup frozen whipped topping, thawed
- 1 cup mini marshmallows
- 1 cup coconut flakes
Mix together all ingredients. Cover and refrigerate until chilled.

Notes for Tuesday:
- I recommend periodically making a double (or triple) pizza dough recipe in your bread machine or large mixer and freezing the extra dough for an easy lunch or dinner another day. The Urban Homemaker has a double pizza dough recipe that is very good. It has variations for garlic, herbed, or seeded dough.
- If you are using a bread machine to make dough, time it so that it is ready just before you want to cook the pizza. If you are using a frozen pizza dough, be sure to allow enough time for it to thaw. I like to thaw it for several hours in the refrigerator.
- Use chicken from your freezer and season with your favorite bbq sauce, or add extra chicken to your grocery list.
Barbecue Chicken Pizza
- Prepared pizza crust
- 1 jar barbecue sauce
- 1 cup cooked chicken (from freezer)
- Sliced red onion
- 2 cups cheddar cheese
Make pizza dough according to recipe and roll out on a pizza stone or pan. Spread with barbecue sauce. Layer remaining ingredients. Cook at 400°F until brown and bubbly.
Fruit Smoothies
- 1/2 quart vanilla yogurt
- 1 cup frozen strawberries
- 1 banana
- 1 cup orange juice
Combine all ingredients in a blender and serve cold. If you prefer a more slushy effect, add crushed ice (if your blender can handle it). If your blender doesn't have a strong motor, thaw the strawberries before blending.
Wednesday Recipes
Notes for Wednesday:
- Tonight, for ease, I have added canned tomato soup to the grocery list. If you have a favorite tomato soup recipe feel free to use your own.
- If the man of the house thinks a meal isn't a meal without meat, add a slice or two of ham to his grilled cheese sandwich. Be sure to add ham to the grocery list if needed.
Tomato Soup - canned* or your favorite recipe
Grilled Cheese Sandwiches
- bread
- American cheese slices
- butter
Put 1-2 slices of cheese between two bread slices and butter the outside on both sides. Grill on a flat griddle until both sides are golden brown and crispy.

Enjoy your leftovers in an open face Turkey sandwich. Use a slice of bread, add cranberry sauce if you have any leftover, add potatoes or make some mashed potatoes, add a few pieces of turkey and cover with leftover gravy.
