This one dish meal is perfect for a cold winter night and can be made in a slow cooker if you prefer. Allow at least 3 hours for baking time if cooking in the oven and 7-8 hours if cooking in a slow cooker on high.

This delicious stew takes about 3-½ hours to prepare and bake in the oven, or can be prepared for the crockpot and baked for about 6 hours on high.
🥘 Ingredients
Start with:
- 2 lbs beef, cubed
- 3 celery stalks
- 4-6 potatoes
- 1 lg onion
- 4 carrots
- 2 (10 oz) cans of tomato soup
- 1 (10 oz) can cream of mushroom soup
- 2 C water (not pictured)
- salt and pepper to taste (not pictured)

Chop the celery:
Then chop the carrots:
The potatoes will start to brown if they sit too long before cooking, so I peel and chop them next to last.
Onions make me cry, so I chop them last whenever possible.
Place the beef in the casserole dish, then layer the vegetables in the pan over the beef, onions first, then celery.
Add the potatoes:
Layer the carrots on top of the potatoes. In a bowl, mix the 3 cans of soup with 2 cups of water and salt and pepper to taste. Pour over the vegetables.
Cover and bake at 375°F for 2-3 hours (or 6-7 hours on low in a slow cooker) until vegetables are tender.
Serve immediately with a green salad.

Ingredients

- 1 lg onion, chopped
- 4 carrots, chopped
- 20 oz condensed tomato soup
- 10 oz condensed cream of mushroom soup
- 2 C water
- salt and pepper to taste
Instructions
- Preheat oven to 375°F .
- Layer meat in a large casserole dish then layer vegetables in the following order on top of the meat - onion, celery, potatoes, and carrots.
- In a bowl combine soups and water and season with salt and pepper; pour in a casserole dish evenly over contents.
- Cover and bake at 375°F for at least 3 hours until vegetables are tender.
