Turkey Caprese Sandwiches

You can use either deli sliced turkey or roast turkey slices in this easy and delicious turkey caprese sandwich. One of the best ways you can save money on groceries is to shop when food is on sale, and you can freeze turkey roasts, whole turkeys, and turkey breasts as well as deli turkey slices. I have a turkey breast in my freezer right now that I bought fresh after Christmas when all of the fresh turkeys went on sale—pay attention to big selling times for specific items, and look for them on sale after that selling time has passed to stock up.

You’ve probably heard me extol the virtues of keeping live basil growing inside all year long, and caprese salads and sandwiches are one reason why. If there is ever a choice between fresh herbs and their dried counterparts, always go for the fresh! I’m lucky to have a nice sunny window where I can keep basil and other herbs growing all year round, and fresh basil is wonderful for giving recipes an extra punch of flavor. (For more about basil, see our Basil Fact Sheet.)

  1. Although you can use packaged mozzarella slices, fresh mozzarella (usually found near the deli section) is a delicious alternative.
  2. If you use sliced deli turkey instead of turkey cutlets, either heat several slices together for each sandwich or purchase a brand with thick slices.
